Oven cook from chilled.
If freezing at home, defrost thoroughly before cooking. 200°C/Fan 180°C/Gas 6. For medium: 1 hour 40 mins
Before cooking: Preheat oven. Remove the joint from the packaging and allow to rest at room temperature for 30 minutes. Rub with 5ml of oil and season with salt and pepper.
During cooking: Place the beef in the oven and cook for 1 hour 28 minutes for rare, medium cook for 1 hour 40 minutes and well done cook for 1 hour 55 mins. Baste occasionally
After cooking: Remove the beef and allow to rest for 30 minutes. This product should be cooked until it is piping hot throughout. If cooking rare, check the surface is fully seared/browned. All cooking appliances vary. This is a guide only.
