Oven cook from chilled. 220°C / Fan 200°C / Gas 8

Before cooking: Preheat oven. To ensure pastry remains crisp, keep lamb wellington in the fridge until the oven has reached temperature. Remove from fridge and remove carton and film lid. Use the greaseproof paper to lift the Wellington carefully out of the tray. Place on a preheated baking tray on the middle shelf of the oven.
During cooking: For medium cook for 52 minutes, for well done cook for 65 minutes.
After Cooking: Remove the Wellington from the oven and leave to rest for 10 minutes. Slice to serve. This product should be cooked until piping hot throughout. If cooked rare there is a small risk that harmful bacteria may be present.
