Oven cooked from chilled
Before cooking: Preheat oven to 200C/Fan 180C/Gas 6, take the beef out of the packaging 30 minutes before cooking. Rub the joint with 5ml of oil and season with sea salt and pepper.
Rare - place the beef in the oven and cook for 20 minutes then turn the oven down to 140C/ Fan 120C/ Gas 1 for 84 minutes.
Medium - place the beef in the oven and cook for 20 minutes then turn the oven down to 140C/ Fan 120C/ Gas 1 for 126 minutes.
Well done - place beef in the oven and cook for 20 minutes then turn the oven down to 140C/ Fan 120C/ Gas 1 for 158 minutes.
During cooking: Baste occasionally.
After cooking: Remove the beef and allow to rest for 30 minutes. Once rested, for easier carving remove the bone from the back of the joint by carving on the inside of the bone and allow the knife to follow the bone to the base of the joint. Carve joint to desired thickness.
This is only a guide, cooking appliances vary. If cooked rare there is a small risk that harmful bacteria may be present.
