packaging 30 minutes before cooking. Rub the
joint with 5ml of oil and season with sea salt
and pepper. For Rare - place the beef in the
oven and cook for 1 hour 28 minutes, For
Medium - place the beef in the oven and cook
for 1 hour 40 minutes, For Well Done - place
the beef in the oven and cook for 1 hour 55
During Cooking:- Baste Occasionally
After Cooking: Remove the beef and allow to
rest for 30 minutes. Check food is pipping hot.
