Oven cook from chilled.
200°C/Fan 180°C/Gas 6. For medium: 1 hour 40 mins
Before Cooking: Preheat oven to 200C/Fan 180C/Gas mark 6. Take the beef out of packaging 30 minutes before cooking. Rub the joint with 5ml of oil and season with sea salt and pepper.
During Cooking: Place the beef in the oven and cook for 1 hour 28 minutes for rare, medium cook for 1 hour 40 minutes and well done cook for 1 hour 55 mins. Baste occasionally.
After Cooking: Remove the beef and allow to rest for 30 minutes. This product should be cooked until it is piping hot throughout. If cooking rare, check the surface is fully seared/browned.
