Cooking instructions


Oven cook from chilled. 220°C/Fan 200°C/Gas 7. Calculate total time as 30 mins + 30 mins per 0.5kg.

Before cooking:
Preheat oven. Remove all packaging, keeping strings in place. Rub the rind dry with paper towel. Add a tablespoon of oil to the rind and massage it into the cuts. Leave at room temperature for 30 minutes. Cover the bone with foil to prevent it from burning. Place the joint on a low roasting rack in a baking tray.
During cooking:
Cook in the centre of the oven for 30 minutes at 220°C/Fan 200°C/Gas 7. If the crackling is still a bit soft cook on for an extra 10 minutes. Turn the oven down to 180°C/Fan 160°C/Gas 4 and cook for the remainder of the total cooking time.
After cooking:
Remove from the oven and rest for 10 minutes, remove strings with scissors and carve. Check food is piping hot throughout and juices run clear. All cooking appliances vary. This is a guide only.

    Cook thoroughly until piping hot throughout and the juices run clear. If not fully cooked in accordance with the instructions harmful bacteria may remain.

Storage

For use by date: see top of pack.
Keep refrigerated, once opened use straight away and do not exceed the use by date.
For best quality, freeze as soon as possible after purchase and always within the use by date. Once frozen use within 2 months.
Defrost thoroughly and consume within 24 hours.
Do not refreeze once defrosted.
