Oven cook from chilled. 200°C/Fan/180°C/Gas 6. 2 hours
Before cooking: Preheat oven. Remove all packaging and set the sauce sachet to one side. Place the joint on a foil lined baking tray. Cover the meat loosely with foil, creating a tent over the joint. Place on the middle shelf of the oven.
After cooking: Remove the joint from the oven and allow to rest for 10 minutes in a warm place. Carefully remove the strings with scissors. Whilst the joint is resting, place the unopened sauce sachet in a pan of water and bring to the boil. Remove from the heat and leave sachet in the water for 5 minutes.
Carefully remove the sachet from the hot water and pour the sauce over the meat to serve. Check food is piping hot throughout and all juices run clear.

Air fry from chilled. 180°C 2 hours 15 min.
Air fryers vary in their performance so please consult manufacturer's guidance. Cook times are only a guideline and based on 1.3kg portion.
