Cooking instructions
To oven cook from chilled.
Step 1
Preheat oven to 240°C/Fan 220°C/Gas Mark 9. Calculate total cooking time as 30 minutes plus 20 minutes per 500g. Remove all packaging, keeping strings in place and set the sauce sachet to one side. Allow to rest for 30 minutes before cooking.
Step 2
Place the joint on a foil lined baking tray. Rub the rind dry with paper towel. Add a tablespoon of oil and a pinch of salt to the rind and massage it into the cuts. Cover the bone with foil to prevent it from burning. Place the joint on a low roasting rack in the roasting tray.
Step 3
Cook in the centre of the oven for 30 minutes at 240°C/Fan 220°C/Gas Mark 9. If the crackling is still a bit soft cook for an extra 10 minutes.
Step 4
Turn the oven down to 200°C/Fan 180° C/Gas Mark 6 and cook for the remainder of the total cooking time.
Step 5
In the last 15 minutes of the cooking time, remove the joint from the oven and carefully remove the strings with scissors and the crackling with a knife. Pour the festive spiced glaze over the top of the joint and return to the oven for the remaining 15 minutes of cooking time.
Step 6
Remove from the oven and allow the joint to rest for 10 minutes in a warm place. After slicing, pour the remaining liquor from the roasting tray over the joint. Check food is piping hot and all juices run clear. All cooking appliances vary. This is a guide only.
