Cooking instructions

Oven cook from chilled. 240°C/ 220°C Fan/ Gas 9. Refer to the total cook time on the front of the pack label

Before cooking: Remove all packaging. Dry the rind with a paper towel and rub in 2 tablespoons of salt, then leave for 20 minutes. Remove salt and moisture with a paper towel then gently rub 1 tablespoon of vegetable oil over the rind. Sprinkle a further teaspoon of salt onto the skin and place joint into a roasting tin.
During cooking: Cook in the centre of the oven for 30 minutes. Then refer to the total cook time on the front of the pack label, reduce the oven temperature to 200°C/ 180° C Fan / Gas 6 and cook for the remainder of the time.
After cooking: Rest for 20 minutes before carving. Check food is piping hot throughout, all juices run clear and no pink colour remains. This is a guide only. All cooking appliances vary.

Warnings

  • This product is not suitable for rare cooking. Do not undercook raw meat. Keep raw meat separate from cooked foods. Use separate kitchen utensils and surfaces for raw meat and cooked foods or wash them thoroughly between use. Wash hands after handling raw meat. Raw meat may contain organisms hazardous to health. Cook thoroughly until piping hot throughout, no pink colour remains and the juices run clear. If not fully cooked in accordance with the instructions harmful bacteria may remain.

    On opening there may be an odour from the pack. Remove the pork from the packaging, drain and leave to stand for a few minutes. The odour will quickly disappear. The eating quality of the pork is not affected by the odour.

Storage

For use by date: see front of pack. Keep refrigerated. Once opened, use straight away and do not exceed the use by date.
For best Quality, freeze as soon as possible after purchase and always within the use by date.
Once frozen use within 2 months.
Defrost thoroughly in the fridge and use within 24 hours. Do not refreeze once defrosted.
