Oven cook from chilled
200°C / Fan 180°C / Gas 7

Oven cook from chilled. If freezing at home, defrost thoroughly before cooking.
Before cooking: Preheat oven. Remove all packaging and set aside sachet for later use. Place the beef shin and juices onto a roasting tray and remove all white solid fat. Leave at room temperature for 15 minutes. Place on middle shelf of the oven and cook for 60 minutes.
During cooking: Baste regularly with the juices from the beef shin. After 60 minutes remove from oven and drain off juices, chestnuts and onions into a saucepan. Return the beef shin to the oven and cook for a further 30 minutes.
After cooking: Remove from the oven, loosely cover with foil and rest for 10 minutes. Add sauce sachet to the saucepan containing juices, chestnuts and onions and simmer for 5 minutes on a medium heat. Place the beef shin onto a dish and pour over the sauce to serve.
