Oven cook from chilled.
Before cooking: Preheat oven. Remove all
packaging, keeping strings in place and set
the glaze sachet to one side. Allow to rest for
30 minutes before cooking. Place the joint on
a foil lined baking tray. Rub the rind dry with
paper towel. Add a tablespoon of oil and a
pinch of salt to the rind and massage it into
the cuts. Cover the bone with foil to prevent it
from burning. Place the joint on a low
roasting rack in the roasting tray, on the
middle shelf of the oven.
During cooking: Cook for 45 minutes,
spinning tray halfway though. Turn the oven
down to 200°C / Fan 180°C / Gas 6 and cook
for the remainder of the cooking time.
After cooking: Remove the joint from the
oven and carefully remove the strings with
scissors. Leave to stand for 15 minutes.
Whilst the joint is resting, place the unopened
glaze sachet in a pan of water and bring it to
the boil. Remove from the heat and leave
sachet in water for 5 minutes. Carefully
remove the sachet from the hot water and
pour the glaze over the meat to serve. Carve
gammon into thin slices. Check food is piping
hot throughout and the juices run clear.
