Description

Dry cured crackling gammon joint on-the-bone hand cured with Yorkshire sea salt finished with a festive spiced glazed.
Our Taste the Difference Discovery gammon is made using select cuts of pork from our outdoor bred Hampshire Black pigs, exclusively bred and sustainably reared for Sainsbury's on World Farms for their superb tenderness and succulence. Skilfully butchered then hand rubbed with our exclusive cure based on a recipe that has been handed down through three generations of the Scaife family of butchers from Keighley. We use Yorkshire sea salt harvested from the beautiful North Yorkshire coast using traditional and sustainable methods giving this gammon its unique mild and delicate flavour. We've added a sweet glaze made from wildflower honey and soft dark sugar mixed with cinnamon, clove and ginger for a little festive spice. Cooking instructions

Oven cook from chilled 240°C / Fan 220°C / Gas 9. 30 minutes plus 20 minutes per 500g

Oven cook from chilled.
Before cooking: Preheat oven. Remove all packaging, keeping strings in place and set the glaze sachet to one side. Allow to rest for 30 minutes before cooking. Place the joint on a foil lined baking tray. Rub the rind dry with paper towel. Add a tablespoon of oil and a pinch of salt to the rind and massage it into the cuts. Cover the bone with foil to prevent it from burning. Place the joint on a low roasting rack in the roasting tray, on the middle shelf of the oven.
During cooking: Cook for 45 minutes, spinning tray halfway though. Turn the oven down to 200°C / Fan 180°C / Gas 6 and cook for the remainder of the cooking time.
After cooking: Remove the joint from the oven and carefully remove the strings with scissors. Leave to stand for 15 minutes. Whilst the joint is resting, place the unopened glaze sachet in a pan of water and bring it to the boil. Remove from the heat and leave sachet in water for 5 minutes. Carefully remove the sachet from the hot water and pour the glaze over the meat to serve. Carve gammon into thin slices. Check food is piping hot throughout and the juices run clear.

Storage

For use by date: see front of pack. Keep refrigerated. Once opened, use immediately and do not exceed the use by date.
For best quality, freeze as soon as possible after purchase and always within the use by date. Once frozen use within 2 months.
Defrost thoroughly and use within 24 hours. Do not refreeze once defrosted.
