240˚C / Fan 220˚C / Gas 9. 30 mins then
200°C/ 180°C Fan / Gas 6. 20 mins per 500g
Oven cook from chilled. If freezing at home,
defrost thoroughly before cooking.
Before cooking: Preheat oven. Remove all
packaging and set aside herb brush and
butter pellets. Dry the rind with a paper towel.
Cover the exposed bones on both sides of
the joint with kitchen foil and place joint into a
roasting tin.
During cooking: Cook in the centre of the
oven for 30 minutes. Reduce the oven
temperature and cook for a further 20
minutes per 500g or refer to the total cook
time on the front of the pack label. Remove
from oven and rest the joint for 10 minutes.
After cooking: While the joint is resting, place
the butter pellets and herb brush in a
saucepan over a moderate heat until butter
pellets are melted. Remove from heat and
allow to infuse and cool slightly for 10-15
minutes. Use the herb brush generously to
glaze the crackling with the melted butter.
Check food is piping hot throughout, all juices
run clear and no pink colour remains.
