Description

Hampshire black salt aged 10 bone pork rib roast exclusively bred and sustainably reared on Wold Farms, who are dedicated to producing the best quality pork.

Our Taste the Difference Discovery pork rib roast uses selected cuts from our outdoor bred Hampshire Black pigs, exclusively bred and sustainably reared for Sainsbury's on Wold Farms for their superb tenderness and succulence. This show-stopping centrepiece joint has been French-trimmed and aged with Anglesey Sea Salt, perfectly scored and comes with a herb brush and delicious brown butter to ensure melt-in-the-mouth succulence, exceptional flavour and crispy crackling.

Cooking instructions

240˚C / Fan 220˚C / Gas 9. 30 mins then 200°C/ 180°C Fan / Gas 6. 20 mins per 500g
Oven cook from chilled. If freezing at home, defrost thoroughly before cooking.

Before cooking: Preheat oven. Remove all packaging and set aside herb brush and butter pellets. Dry the rind with a paper towel. Cover the exposed bones on both sides of the joint with kitchen foil and place joint into a roasting tin.
During cooking: Cook in the centre of the oven for 30 minutes. Reduce the oven temperature and cook for a further 20 minutes per 500g or refer to the total cook time on the front of the pack label. Remove from oven and rest the joint for 10 minutes.
After cooking: While the joint is resting, place the butter pellets and herb brush in a saucepan over a moderate heat until butter pellets are melted. Remove from heat and allow to infuse and cool slightly for 10-15 minutes. Use the herb brush generously to glaze the crackling with the melted butter.
Check food is piping hot throughout, all juices run clear and no pink colour remains.

Storage

For use by date: see front of pack.
Keep refrigerated.
Once opened, use on the same day and do not exceed the use by date.
For best quality, freeze as soon as possible after purchase and always within the use by date. Once frozen use within 2 months. Once defrosted use the same day. Do not refreeze once defrosted.
