Moderate heat 7 mins for medium.
Pan fry from chilled. If freezing at home, defrost thoroughly before cooking.
Before cooking: Remove all packaging and allow medallions to rest at room temperature for
20 minutes. Return sauce sachet to fridge. Heat a frying pan to high heat.
During cooking: Add 10ml cooking oil to hot pan and carefully add the medallions. Sear all
sides for 3 minutes. Reduce temperature to moderate heat and continue to cook for rare 4
minutes 30 seconds, medium 7 minutes and well done 12 minutes turning occasionally. Add
10g of butter and baste for the final 2 minutes of cooking. Remove medallions from pan and
leave on a warm plate for 5 minutes. Add the sauce sachet to a small pan of simmering
water for 5 minutes.
After cooking: Remove the elastic from around the medallions. Carefully remove the sachet
from the hot water and cut a corner. Pour sauce into a warm serving jug. Cut the medallions
in half to form 2 rounds. Serve with the jug of sauce. If cooking rare, check the surface is
fully seared/browned.
