We’ve created this lavish vegan roast especially for Christmas. It’s packed with crisp
cashews, almonds and pistachios in a savoury mushroom, butternut squash and spinach
base. Seasoned with garlic and thyme and sprinkled with tangy cranberries, it’s perfect
with our boozy port and redcurrant gravy.

Oven cook from chilled.
Before cooking: Preheat oven. Remove from outer packaging and put sachet to one side. Pierce film. Place on the baking tray on the middle shelf of the oven.
During cooking: Remove film after 35 minutes.
After cooking: Check food is piping hot. Do not reheat once cooled. All cooking appliances vary. This is a guide only.
Oven cook from chilled: 200°C / Fan 180°C / Gas 6. 40 mins.
Port and Redcurrant Gravy
Microwave from chilled.
Before cooking: Empty contents of sachet into a bowl.
After cooking: Check food is piping hot. Allow to stand for 1 minute. Do not reheat once cooled. All cooking appliances vary. This is a guide only.
Microwave on full power: 700w 1½ mins / 800w 1½ mins / 900w 1½ mins.
