Oven cooked from chilled. If freezing at home, defrost thoroughly before cooking.
Before cooking: Preheat oven. Remove packaging and allow to rest at room temperature for 30 minutes. Brush the joint with 10ml of oil and season with salt and pepper. Heat a large, heavy bottomed frying pan to a high heat.
During cooking: Sear the fillet for 6 minutes. Transfer the fillet into a preheated roasting dish and place in the centre of the preheated oven. Cooking time for rare is 26 minutes, medium 44 minutes and well done 52 minutes.
After cooking: Remove from the oven and allow to rest for 10 minutes. This product should be cooked until piping hot throughout.
