Cooking instructions

Time: For medium, 1 hour 45 mins, Temp: 180°C/Fan 160°C/Gas 6

Oven cooked from chilled.

Before cooking: Remove joint from packaging and allow to breathe at room temperature for up to 30 minutes. Preheat oven to 180C/Fan 160C/Gas 6. Remove butters from the top of the joint and place to one side. Place the joint with topping facing up in a deep roasting tray and cover with foil. Place in the centre of the pre-heated oven.

During cooking: To cook rare 1 hour 25 minutes, medium 1 hour 45 minutes, well done 2 hour 15 minutes. Remove from the oven 5 minutes before the end of the cook, remove the foil and place the butters on top before returning to the oven for the final 5 minutes uncovered.

After cooking: Rest for 20 minutes on completion of cooking. Baste the joint in the extra melted butter before carving. Check food is piping hot. All cooking appliances vary. This is a guide only. If cooked rare there is a small risk that harmful bacteria may be present.

  • Keep raw meat separate from cooked foods. Use separate kitchen utensils and surfaces for raw meat and cooked foods or wash them thoroughly between use. Wash hands after handling raw meat. Raw meat may contain organisms hazardous to health. If cooking rare, do not pierce the meat before cooking and ensure the surface is fully seared/browned.

Storage

For use by date: see front of pack. Keep refrigerated. Once opened, use within 24 hours and do not exceed the use by date.
For best Quality, freeze as soon as possible after purchase and always within the use by date. Once frozen use within 3 months. Once defrosted use the same day. Defrost thoroughly and use within 24 hours. Do not refreeze once defrosted.
