Oven cooked from chilled. 180°C/Fan 160°C/Gas 6. For medium, 1 hour 45 min
If freezing at home, defrost thoroughly before cooking.
Before cooking: Preheat oven. Remove joint
from packaging and allow to rest at room
temperature for 30 minutes. Remove butters
from the top of the joint and place to one
side. Place the joint with topping facing up in
a deep roasting tray and cover with foil.
During cooking: Place in the centre of the
preheated oven and cook for 1 hour 25
minutes for rare, 1 hour 45 minutes for
medium and 2 hours 15 minutes for well
done. Remove from the oven 5 minutes
before the end of the cook, remove the foil
and place the butters on top before returning
to the oven for the final 5 minutes uncovered.
After cooking: Remove from oven and allow
to rest for 20 minutes. Baste the joint in the
extra melted butter before carving. If cooking
rare, check the surface is fully
seared/browned.
