Description
Our meaty British beef short ribs are a labour of love: meltingly tender and full of rich flavour. We've slow cooked them for more than eight hours in a savoury red wine and bone marrow gravy, with chestnut mushrooms and whole Silverskin onions. And for an almost effortless Valentine's, we've added a side of sous vide crisp, butter-roasted diced potatoes and sweet Chantenay carrots basted in West Country butter.

Oven cook from chilled.
220°C / Fan 200°C / Gas 7. 40 mins.
Before Cooking: Preheat oven. Remove product from box.
Decant the content of each beef rib pouch into a separate foil tray provided, loosely cover with foil.
Decant the diced potatoes and all the butter onto a flat ovenable tray.
Place trays in the centre of the oven and cook for 20 minutes.
During Cooking: Remove the potatoes from the oven, shake/turn and return to the oven for the final 20 minutes.
Remove the beef trays from the oven, discard foil and baste with the cook juices.
Return to the oven uncovered for the final 20 minutes.
Decant the carrots and all the butter into 1 foil tray provided. Place tray in the centre of the oven and cook for 20 minutes.
After Cooking: Remove all trays from the oven and follow serving instructions.
Check food is piping hot. Do not reheat. All cooking appliances vary. This is a guide only.
