Description
Our smoky mesquite infused British pork belly is a labour of love. It's slow cooked for more
than four hours, until it's sweet, tender and oh-so-succulent. It's accompanied by sweet
butternut squash purée enriched with double cream, crispy roasted diced potatoes and
whole Chantenay carrots basted in West Country butter. Ready for you to heat and serve
with our tangy-sweet maple and whisky sauce and crunchy crackling-crumb sprinkle.

Oven cook from chilled.
220°C / Fan 200°C / Gas 7. 40 mins.
Before cooking:
Preheat oven. Remove product from box and place the sachets to one side. Decant the diced potatoes and all the butter onto a flat ovenable tray. Place tray in the centre of the oven and cook for 20 minutes.
During Cooking:
After 10 minutes of cooking the potatoes, decant the pork belly with all cooking juices into one of the foil trays provided.
Place tray in the centre of the oven and cook for 30 minutes. Remove the potatoes from the oven, shake/turn and return to the oven for the final 20 minutes. Decant the carrots and all the butter into the second foil tray provided. Place tray in the centre of the oven and cook for 20 minutes.
After Cooking:
5 minutes before the end of cook, heat a frying pan with 2 tablespoons (30ml) of oil. Once hot add the crackling crumb and pan fry until the crumb crackles and expands like popcorn (40-60 seconds) (Chef tip, add a sprinkle of salt for flavour).
Decant the sauce into a pan and heat over a medium heat for 1 minute stirring throughout until hot. Decant the puree into a pan and heat over a medium heat for 1 minute stirring throughout until hot. Or heat as per microwave instructions. Remove all trays from the oven and follow serving instructions. Check food is piping hot. Do not reheat.

Empty the content of crackling crumb sachet into a microwaveable bowl.
Heat on full power for 5 mins (750W) or 3 mins (900W) until the crumb crackles, stopping at regular intervals to stir.
Empty the content of the sauce sachet into a microwavable bowl and cover. Heat on full power for 50 secs (750W) or 40 secs (900W), stir halfway through.
Empty the content of the purée sachet into a microwavable bowl and cover. Heat on full power for 1 min 30 secs (750W) or 1 min (900W), stir halfway through.
