Cooking instructions
Oven cook from chilled 220°C / Fan 200°C. 1 hour 15 mins
If freezing at home, defrost thoroughly before cooking.
Before cooking: Preheat oven. Remove all packaging and allow to rest at room temperature for 30 minutes. Rub joint with 2 tablespoons of oil and sprinkle with salt and pepper.
During cooking: Place joint on a roasting tray in the preheated oven for 15 minutes. Reduce temperature to 180°C / Fan 160°C and cook for a further 16-18 minutes per 500g for rare, 19-21 minutes per 500g for medium and 22-24 minutes per 500g for well done.
After cooking: Remove from the oven and allow to rest on a warmed plate for 10 minutes. This product should be cooked until piping hot throughout. If cooking rare, check the surface is fully seared/browned.
