Cooking instructions
Oven cook from chilled. 210°C / Fan 190°C / Gas 7. 50 minutes
If freezing at home, defrost thoroughly before cooking
Before cooking: Preheat oven to 210°C / Fan 190°C / Gas 7.
Remove all packaging and leave the beef at room temperature for 20 minutes. Lightly season with salt. Place on a roasting tray on the middle shelf of the oven for 50 minutes.
After cooking: If cooking rare, check the surface is fully seared/browned.
Remove from oven, cover joint in foil and leave to rest for 30 minutes. Place the rested joint onto a chopping board and thinly slice. Serve the beef on a warmed plate.
